The olfactory system as a chemical analyzer has no equal in sensitivity Recently, the mechanisms of olfactory perception are considered at the molecular level of structural biochemistry and kinetics of enzymatic reactions. The article is devoted to these issues and discusses the role of alkaline phosphatase enzyme as an important transport protein of vertebrate olfactory systems.
